Banana oatmeal chocolate chips cookies

Ingredients

  • 3 ripe bananas ~270 g in total
  • 100 g rolled oats
  • 40 g dark chocolate 75% with stevia
  • 5 g coconut flakes unsweetened
  • 1 tsp vanilla essence

Instructions

  • Peel the bananas, put them in a bowl and mash them with a fork until a piure is obtained.
  • Break the chocolate in small chips, then do the same with the coconut flakes if you have large ones and add them in the bowl with the bananas.
  • Add the vanilla essence and mix thoroughly.
  • Let the composition 'rest' for 15 minutes before baking it (this will soften the oats). In the meantime, you can preheat the oven at 180C.
  • Lay a baking paper sheet on a shallow tray.
  • Scoop the cookies composition with a spoon and form discs on the baking paper. You should normally obtain 9 cookies.
  • Put the tray in the oven and bake for 20 minutes at 180C.
  • Let the cookies cool completely before serving.

Notes

The cookies will have a moist texture, if you want them to be more crispy, then increase the baking time 5 minutes at a time. However, I do not recommend baking them for more than 30 minutes in total.
