Black rice porridge with coconut milk, mango and blueberries

Ingredients

  • 100 g black rice
  • 400 ml low fat milk 1.5% fat
  • 100 ml light coconut milk
  • 1/2 mango
  • 1 handful of fresh blueberries

Instructions

  • Set the milk and rice to simmer in a medium pot over medium heat for 20 minutes while stirring from time to time.
  • Add half of the coconut milk and simmer for 5 more minutes.
  • Add the rice to serving bowls and garnish with diced mango, the blueberries and the remaining coconut milk.
