Wash the zucchini, cut them in half and remove the seeds. Use a food processor or a grater to grate the pulp. Mix with a pinch of salt and set aside for half an hour in a colander.
After the time elapsed, take the content from the colander and squeeze it with your palms so that the liquid is drained out as much as possible.
Add the result to a large mixing bowl.
Cut the ham and the cheese in small pieces.
Add all ingredients to the bowl with the zucchini and mix thoroughly.
Prepare a shallow baking tray with baking paper. Scoop the zucchini and add it to the baking paper, flatten it out evenly. In the end they should look like mini-pancakes.
Spray lightly with olive oil on the top and bake for 30 minutes at 200C.
Serve warm or cold. Optionally, serve with tomato slices and mozzarella :)
