pasta
preferably whole-wheat

smoked salmon

light mini mozzarella balls

red onion

avocado

lettuce
juice from half a lemon
salt and pepper to taste
Instructions
Boil the pasta according to the package instructions. Drain and set aside to cool down.
Peel and finely dice the onion.
Cut the salmon in shreds and the mozzarella balls into halves.
Peel and cut the avocado into chunks, then drizzle half of the lemon juice on top to keep them from oxidizing.
Mix everything together with the remaining lemon juice in a large bowl.
Season with salt and pepper to taste, then serve.
