Smoked salmon pasta salad

I can say that by far and up until now, this is my favorite pasta salad. I realized that I wasn’t really a big fan of pasta salads. The idea of consuming cold pasta didn’t appeal to me and it was mostly because I didn’t know how to combine the flavors and textures properly. But this has notably changed and with this recipe I am playing with some ‘ness‘ – crunchiness, fatty tenderness, smoothieness and flavourness – lots of ness 😀

Smoked salmon pasta salad

Ingredients

  • 250 g pasta preferably whole-wheat
  • 150 g smoked salmon
  • 125 g light mini mozzarella balls
  • 1/4 red onion
  • 1 avocado
  • 1/2 lettuce
  • juice from half a lemon
  • salt and pepper to taste

Instructions

  • Boil the pasta according to the package instructions. Drain and set aside to cool down.
  • Peel and finely dice the onion.
  • Cut the salmon in shreds and the mozzarella balls into halves.
  • Peel and cut the avocado into chunks, then drizzle half of the lemon juice on top to keep them from oxidizing.
  • Mix everything together with the remaining lemon juice in a large bowl.
  • Season with salt and pepper to taste, then serve.

Notes

Suitable for meal prepping for the next day.
