Beat the eggs in a bowl and salt to taste.
Heat a large pan (make sure you have a lid for it) and add the eggs, then turn the heat to medium and set the lid on.
Turn the omelette when one side is cooked and leave for 1-2 minutes on the other side, still with the lid on.
Take our the omelette on a large plate and leave to rest while you prepare the topping.
Grab a bowl and add the drained tuna, the roasted pepper cut in shreds, the finely sliced onion and the grated mozzarella.
Add the mix on top of the omelette and microwave for 2 minutes.
Garnish with pesto drops here and there and enjoy while warm.
