Tuna and pesto omelette

It’s easy and it’s low fat! What more could you wish for? This variation of the tuna melt omelette brings a new flavor in town – pesto FTW. Enjoy!

Ingredients

  • 4 free range eggs
  • 1 can tuna in brine drained
  • 1/2 small red onion
  • 1 roasted bell pepper
  • 100 g mozzarella I used 18% fat one
  • 1 tbsp green pesto
  • salt to taste

Instructions

  • Beat the eggs in a bowl and salt to taste.
  • Heat a large pan (make sure you have a lid for it) and add the eggs, then turn the heat to medium and set the lid on.
  • Turn the omelette when one side is cooked and leave for 1-2 minutes on the other side, still with the lid on.
  • Take our the omelette on a large plate and leave to rest while you prepare the topping.
  • Grab a bowl and add the drained tuna, the roasted pepper cut in shreds, the finely sliced onion and the grated mozzarella.
  • Add the mix on top of the omelette and microwave for 2 minutes.
  • Garnish with pesto drops here and there and enjoy while warm.
