Low-fat beef goulash

I’ve been a fan of goulash since forever and I enjoy cooking this dish during the summery evenings outside with a pot over wood fire. But since I am not able to use this at the time, my stove and pressure cooker will do.

Ingredients

  • 800 g potatoes
  • 600 g lean beef cut
  • 4 carrots
  • 2 red onions large
  • 1 parsley root
  • 2 tbsp red sweet bell pepper paste
  • 1 tsb sweet paprika powder
  • 700 ml tomatoes juice
  • 1/2 tsp pepper
  • salt to taste
  • chili flakes/ salt for serving

Instructions

  • Peel and dice the onions and the carrots, peel the parsley root, then add them to the pressure cooker pot.
  • Remove any visible fat tissue from the beef cut, then cut the meat into medium chunks. Add it to the pressure cooker too.
  • Add the tomato juice, the pepper, paprika and the salt (to taste) to the pot along with 2.5l of water. Seal the lid, turn on the heat and cook for 50 minutes.
  • Release the steam valve and open the lid when the steam stopped hissing.
  • Transfer to a medium pot if the pressure cooker is a large one, or use the pressure cooker pot to finish up this dish.
  • Peel and largely dice the potatoes, set them to cook on medium heat in the transfer or pressure cooker pot, along with the bell pepper paste.
  • Cook until the potatoes are completely boiled.
  • Season with salt and pepper to taste if needed.
  • Since we didn't add any hot spices until now, this dish is suitable for anyone. If you like the spicy version, then just sprinkle chili flakes/ salt on top when serving.
