Plain and simple. This is far from being a complicated recipe. I am actually wondering how can it get complicated? The answer – it can’t, because it is a fast and simple recipe that’s suitable for a light dinner as well as part of a lunch meal.
Peas puree with oven cooked salmon

Ingredients
- 600 g frozen peas
- 2 salmon files (skin on) ~150g each
- 15 g low fat butter 40% fat (I used Albalact)
- 1/2 lemon
Instructions
Fish
- Preheat the oven at 200°C.
- Lay the salmon files (skin down) in a baking tray over baking paper.
- Season with freshly ground salt and pepper, then insert in the oven for 25 minutes.
- Remove from the oven and leave to cool.
Peas
- In the meantime, boil the peas until tender in a pot with salted water.
- Add 200 ml water from the peas into a bowl for later use, then drain the rest.
- Use an immersion blender to mash the peas, while adding the butter, the water, a few lemon juice drops and seasoning to taste.
- Add the peas to a sieve and by using the back of a ladle, push the content through the sieve. This way, you will obtain a far smoother composition, but you can skip this step if after using the immersion blender you are satisfied with the texture you got.
- Cool down the obtained puree so that the color doesn't fade by adding it to a container with a lid, then immersed it under cold running water, then put it in the fridge until serving.
Serving
- Plain and simple – puree + salmon and a squeeze of a lemon slice.
