Pimientos de Padron

Loved how this lovely snack comforted us while in Barcelona! So I had to try it out, obviously with an extra cup of nostalgia on top.

Ingredients

  • 250 g Padron peppers
  • 100 ml olive oil extra virgin
  • 100 ml sunflower oil

Instructions

  • Rinse the peppers and dry with kitchen paper towels.
  • Fry the peppers in the heated oils over medium to high heat for 2 minutes, then turn.
  • The peppers are done when blisters appear on their surface and they look slightly brown. Take out on a large plate covered with kitchen paper towels.
  • Season with salt flakes to taste and serve warm.
