This is a great recipe if you want to try something new. The ‘rice’ in the title isn’t rice at all, it’s a combination of fresh broccoli and cauliflower florets with mixed seeds. Wanna give it a go?
Salmon and potatoes en papillote with broccoli and cauliflower rice

Ingredients
Salmon en papillote
- 2 fillets salmon ~200 g each raw piece
- 2 potatoes
- 2 garlic cloves
- salt, pepper and chilli flakes to taste
Broccoli and cauliflower rice
- 1/4 brocolli
- 1/4 cauliflower
- juice from a lemon
- 20 g mixed seeds sunflower, sesame, pumpkin seeds and flaxseed
- salt and pepper to taste
Instructions
Salmon en papillote
- Preheat the oven at 190C.
- Peel the potatoes, then lay a parchment paper sheet on a tray. Fold the paper in half (width wise), then open it up again and add the slices of one of the potatoes on one of the paper halves. Add the salmon fillet on top and season with salt, chilli flakes and garlic thin slices.
- Fold the free paper half over the one with the fish and potatoes, then seal up the edges by rolling the bottom edge over the top one starting from one end of the paper until the other one, step by step in small lengths.
- Proceed the same way with the remaining parchment paper and ingredients.
- Introduce the tray to the oven for 25 minutes at 190C.
- Take the tray out, leave to rest for a couple of minutes, then carefully open the papillote pouch, really carefully as all the steam is built up in there and it's still hot.
Broccoli and cauliflower rice
- Remove the florets from the broccoli and cauliflower, then put them into the food processor and mix them up until a rice-like composition is obtained.
- Take a small bowl and prepare a mix of lemon juice, the mix seeds, salt and pepper. Mix thoroughly.
- Add the 'rice' to a bowl, then pour the lemon juice and seeds mix. Mix gently and set aside for at least 5 minutes before serving so that the flavors are absorbed.
- Serve the content of the papillote pouch with half of the broccoli&cauliflower rice. Optionally, add cherry tomatoes or other veggies you might want to eat with this.
