Shrimps, green beans and konjac noodles salad

Hot! Very hot outside! So a light dish is in order – a summery lemony salad, everyone! It’s the first time I am using konjac noodles – very low on calories count and tasty too. Check it out!

Ingredients

  • 1 pack konjac noodles I used thosed a Vitanu 270g pack
  • 400 g frozen green beans
  • 30 pre-boiled shrimps
  • 2 garlic cloves
  • 1 lemon
  • 1/2 tsp sweet paprika powder
  • salt and pepper to taste

Instructions

  • Steam the green beans in a multicooker/ steamer if you have one or boil them otherwise. Drain and set aside.
  • Wash the noodles under hot water and drain them, then set aside.
  • Peel the shrimps, then prepare a shallow frying pan on medium heat.
  • Add the shrimps, squeeze the lemon and add the seasoning. Mince the garlic cloves and add it to the frying pan.
  • Cook and toss for 2-3 minutes.
  • Add the green beans, the noodles and the shrimps to a bowl and season with lemon juice and salt to taste.
