I was thinking of this recipe for quite some time now and the fact that I want to try it in a weekend morning. Thought it will take me some time to prepare, but as I found out, it’s very straight forward and ready in no time.

Ingredients
- 3 eggs
- 150 g drained tuna chunks canned in brine
- 60 g mozzarella
- 1/2 pickled red pepper
- 1/4 bundle of fresh parsley
- 1/4 red onion
- 1/4 spring onion
- freshly ground salt and pepper to taste
Instructions
- Mix the eggs with the salt and pepper and prepare a simple omelette out of it. I used a pancakes pan and didn’t use any oil.
- Take out the omelette on a plate and leave to rest until the filling is ready.
- Peel and finely slice the onion and finely slice the spring onion.
- Finely dice the pickled pepper and chop the parsley.
- Mix the tuna with the onion, spring onion, the pickled pepper and the parsley.
- Grate the mozzarella over the tuna and mix gently.
- Put the tuna mix over half of the omelette.
- Turn the half that is not covered over the half with the tuna mix.
- Microwave the resulted omelette for 2 minutes.
- Cut the omelette in half (each half is a serving).
- Serve warm with a slice of wholewheat toast and tomatoes salad.
