Baked egg spinach yum

This one is straight forward, more of a lazy breakfast recipe. My love for spinach doesn’t have long roots, I don’t remember eating it as a child (trust me, I have good memory). I discovered spinach in my uni years and we got married afterwards.

Ingredients

  • 125 gr fresh baby spinach
  • 50 gr cheese (I used “telemea Delaco in brine”)
  • 1 egg
  • 1 l boiling water
  • 1 pinch chili salt

Instructions

  • Turn on the oven to preheat it at 180C.
  • Put the spinach in a strainer and pour the boiling water on it. Leave to completely drain.
  • Put the spinach leaves in a small heat resistant container.
  • Grate the cheese on top of the spinach and form small ‘crater’ in the middle and put the egg in the int.
  • Put the container in the oven (middle grill) and bake for 25 mins.
  • Sprinkle a pinch of chili salt on top and leave to cool for 5 mins.

Notes

  • Drain the excess water the spinach might leave in the container after baking.
  • You can double up the recipe for 2 servings or add as many eggs as you like. The Kcal specification in this recipe is calculated upon the initial list of ingredients.
