You know that moment when you postpone eating the bananas and soon after they are too ripe for your taste? No problem, you can turn them into delicious cookies!
Banana oatmeal chocolate chips cookies

Ingredients
- 3 ripe bananas ~270 g in total
- 100 g rolled oats
- 40 g dark chocolate 75% with stevia
- 5 g coconut flakes unsweetened
- 1 tsp vanilla essence
Instructions
- Peel the bananas, put them in a bowl and mash them with a fork until a piure is obtained.
- Break the chocolate in small chips, then do the same with the coconut flakes if you have large ones and add them in the bowl with the bananas.
- Add the vanilla essence and mix thoroughly.
- Let the composition ‘rest’ for 15 minutes before baking it (this will soften the oats). In the meantime, you can preheat the oven at 180C.
- Lay a baking paper sheet on a shallow tray.
- Scoop the cookies composition with a spoon and form discs on the baking paper. You should normally obtain 9 cookies.
- Put the tray in the oven and bake for 20 minutes at 180C.
- Let the cookies cool completely before serving.
Notes
The cookies will have a moist texture, if you want them to be more crispy, then increase the baking time 5 minutes at a time. However, I do not recommend baking them for more than 30 minutes in total.
