Something new in my kitchen today, the black rice. I read a lot about this type of rice, also called ‘forbidden rice’ and a few weeks back I purchased one package just to see how it tastes. I am sure it tastes great as a side dish too, but today I woke up and in my mind all I could hear was: porridge! So let’s have it! Black rice porridge!
Black rice porridge with coconut milk, mango and blueberries
Servings: 2

Ingredients
- 100 g black rice
- 400 ml low fat milk 1.5% fat
- 100 ml light coconut milk
- 1/2 mango
- 1 handful of fresh blueberries
Instructions
- Set the milk and rice to simmer in a medium pot over medium heat for 20 minutes while stirring from time to time.
- Add half of the coconut milk and simmer for 5 more minutes.
- Add the rice to serving bowls and garnish with diced mango, the blueberries and the remaining coconut milk.
