Have I ever mentioned how much I like spinach? Possibly! But anyway, I love spinach and the combination with eggs. So this morning it’s all about creaminess and taste!
Creamy spinach breakfast

Ingredients
Spinach preparation
- 400 g spinach leaves frozen
- 200 g low fat sour cream 10% fat
- 1 large garlic clove (or 2 smaller ones)
- 1 tbsp cornstarch
- salt and pepper to taste
Serving
- 4 medium hardboiled eggs
- 1 sun-dried tomato
Instructions
- Add the frozen spinach to a deep pan on medium heat stove. Add the lid and leave to simmer. Turn from time to time to allow all the leaves to be cooked. Do this for 10 minutes.
- Add the garlic and the seasoning, then add the lid and cook for 20 minutes. Stir from time to time.
- Add the sour cream and the corn starch, then mix thoroughly until the content thickens. Leave to simmer up to 10 minutes more.
- Serve with medium hard boiled eggs and sliced sun-dried tomatoes.
