I’ve been thinking of preparing madeleines since… forever! But every time the time was filled with something else and each day passed, until today when I said to myself – ‘no more’! So I’ve been doing some research and looked for a recipe that would fit my calories and fat needs and decided to go all-in with a version of myself since nothing I have found matched what I was looking for.
Easy madeleines

Equipment
- 2 silicone molds (mine have each 9 madeleine slots)
Ingredients
- 3 eggs
- 30 g low-fat melted butter 40% fat
- 50 g low-fat greek yogurt 2% fat
- 20 g brown sugar
- 20 g coconut nectar sugar can be replaced by brown sugar
- 120 g all-purpose flour
- 1 tsp baking powder
- zest from one large orange
- a pinch of salt
Instructions
- Add the eggs and the sugar to a deep bowl and use a mixer to beat the eggs until fluffy.
- Add all the dry ingredients to a bowl, then sift them directly to the eggs bowl.
- Add the orange zest and mix gently.
- Refrigerate the composition for 2 hours.
- Turn on the oven to preheat at 175C.
- Prepare the baking molds by spraying them with baking spray. Use a brush to even out the oil in the interior of each slot.
- Take the batter out of the fridge and evenly distribute it to the molds slots.
- Bake for 10-12 minutes until the madeleines are ready (should be raised, golden and if you stick a skewer in them, it should come out clean).
- Enjoy over breakfast with a lovely cup of latte tea!
