Ingredients

  • 400 g small potatoes
  • 200 g kidney beans canned
  • 60 g green olives pitted
  • 1 red onion
  • 3-4 green garlic leaves
  • 1 lemon
  • salt and pepper to taste

Instructions

  • Boil the potatoes, then drain and keep them under cold water for 10 minutes.
  • Peel the potatoes and cut them into chunks.
  • Peel the onion, cut in half, then chop them.
  • Cut the green garlic into fine slices.
  • Rub the garlic and onion with salt and set aside for 2 minutes.
  • Add all the ingredients to a salad bowl and squeeze the lemon. Season with salt and pepper to taste.
