Kidney beans and potato salad

Ingredients
- 400 g small potatoes
- 200 g kidney beans canned
- 60 g green olives pitted
- 1 red onion
- 3-4 green garlic leaves
- 1 lemon
- salt and pepper to taste
Instructions
- Boil the potatoes, then drain and keep them under cold water for 10 minutes.
- Peel the potatoes and cut them into chunks.
- Peel the onion, cut in half, then chop them.
- Cut the green garlic into fine slices.
- Rub the garlic and onion with salt and set aside for 2 minutes.
- Add all the ingredients to a salad bowl and squeeze the lemon. Season with salt and pepper to taste.
