It’s been a while since I purchased 3 nice zucchinis and didn’t have any inspiration to prepare them in any way. So today, I said to myself that I have to take some action, and since I am that kind of person who gathers what’s in currently in the fridge and mixes it all up, I prepared these lovely fritters.
Didn’t know they were called like that, until I had to write this recipe down and didn’t know how to call them.. the internet is full of surprises, these little guys are called ‘fritters’ 🙂 Enjoy!
Oven zucchini fritters

Ingredients
- 3 small zucchinis
- 100 g smoked raw ham
- 50 g white cheese I used President's 'telemea de vaca'
- 2 eggs
- 5 tbsp all-purpose flour
- 1 tsp freshly chopped dill
- salt and pepper to taste
- 2-3 spray puffs of olive oil
Instructions
- Wash the zucchini, cut them in half and remove the seeds. Use a food processor or a grater to grate the pulp. Mix with a pinch of salt and set aside for half an hour in a colander.
- After the time elapsed, take the content from the colander and squeeze it with your palms so that the liquid is drained out as much as possible.
- Add the result to a large mixing bowl.
- Cut the ham and the cheese in small pieces.
- Add all ingredients to the bowl with the zucchini and mix thoroughly.
- Prepare a shallow baking tray with baking paper. Scoop the zucchini and add it to the baking paper, flatten it out evenly. In the end they should look like mini-pancakes.
- Spray lightly with olive oil on the top and bake for 30 minutes at 200C.
- Serve warm or cold. Optionally, serve with tomato slices and mozzarella 🙂
