Something different this time. Was getting a bit bored of the simple oven or grilled salmon, so this time I improvised with this simple idea – pesto covered salmon files. Was the best decision I could take and it definitely made me experience the salmon taste at a whole new level. Try it out!

Ingredients
- 2 pc salmon filets (skin-on) ~250 g each
- 6 tbsp fresh pesto sauce
- 1 lemon
- 1 tsp chili salt
- salt and pepper to taste
Instructions
- Wash the salmon fillets under cold water and dry with kitchen towels.
- Season with salt and pepper.
- Spread the pesto sauce over the skinless side of the fillets.
- Slice the lemon and remove the seeds if there are any.
- Prepare a shallow baking tray with baking paper.
- Cook for 25 minutes in the oven at 190C.
- Take out the tray and remove the excess melted grease.
- Sprinkle chili salt and leave to rest for 5 minutes before serving with your favorite vegetables (I ate the fish with steamed green beans).
