You might have already figured it out that I like vanilla. This is kind of new, I was a chocolate devotee for a long time, but then something changed and I just needed something more subtle and not that sweet. Guess what? Vanilla pudding is always the answer!

Ingredients
- 60 g small tapioca pearls I used Sanovita’s
- 250 ml low fat milk 1.5% fat
- 1 egg
- 1 tbsp honey
- 1 tsp vanilla paste (or a third of a vanilla pod seeds)
- 2 tbsp low sugar strawberry jam
- 30 g strawberries
- 30 g bananas
- 1 pinch salt
Instructions
- Boil the tapioca pearls with the milk on low heat for 15 minutes.
- Whisk the egg in a separate bowl with a pinch of salt.
- Take the tapioca mix from the stove and slowly add the whisked egg while mixing the composition together.
- Put back on low heat for another 5 minutes while constantly stirring.
- Take the pot from the heat completely and leave to rest for 5 minutes.
- Mix in the honey, the vanilla paste (or seeds).
- Pour into a serving bowl or glass.
- Add the strawberries jam on top and the raw fruits cut in chunks.
- Serve warm or leave to cool completely before serving, you choose :).
