Vanilla tapioca pudding

You might have already figured it out that I like vanilla. This is kind of new, I was a chocolate devotee for a long time, but then something changed and I just needed something more subtle and not that sweet. Guess what? Vanilla pudding is always the answer!

Ingredients

  • 60 g small tapioca pearls I used Sanovita’s
  • 250 ml low fat milk 1.5% fat
  • 1 egg
  • 1 tbsp honey
  • 1 tsp vanilla paste (or a third of a vanilla pod seeds)
  • 2 tbsp low sugar strawberry jam
  • 30 g strawberries
  • 30 g bananas
  • 1 pinch salt

Instructions

  • Boil the tapioca pearls with the milk on low heat for 15 minutes.
  • Whisk the egg in a separate bowl with a pinch of salt.
  • Take the tapioca mix from the stove and slowly add the whisked egg while mixing the composition together.
  • Put back on low heat for another 5 minutes while constantly stirring.
  • Take the pot from the heat completely and leave to rest for 5 minutes.
  • Mix in the honey, the vanilla paste (or seeds).
  • Pour into a serving bowl or glass.
  • Add the strawberries jam on top and the raw fruits cut in chunks.
  • Serve warm or leave to cool completely before serving, you choose :).
