Strawberry-banana power bars

Healthy snack bar? Yes, please! Always wanted to prepare my own snack bars since the market is full of sugar bombs, so this time I tried “my way on the highway” with an easy bake combination . Enjoy!

Ingredients

Dough

  • 150 g rolled oats
  • 3 ripe bananas
  • 1 tsp vanilla paste/ essence
  • 1 tsp ground cinnamon
  • 1 tsp baking powder

Topping

  • 400 g fresh strawberries
  • juice from half a lemon
  • 1 tbsp stevia powder

Instructions

  • Wash the strawberries, cut in half and add them to a pot on medium heat. 
  • Squeeze the lemon half over the fruits and leave to simmer for 25 minutes, mixing from time to time. You will prepare a basic jam out of these fruits, so you will make sure that the juice is reduced and the jam is a little thick when ready.
  • In the meantime, add the rolled oats into a food processor and grind until a flour-like consistency is obtained.
  • Add the peeled bananas, the vanilla paste/ essence and the cinnamon. Blend together for a minute.
  • After the strawberry jam is done, leave to cool for a few minutes.
  • Turn on the oven at 190C.
  • Prepare a small baking tin with baking paper inside.
  • Leave 2 scoops of dough aside and put the rest in the baking tin. Level it with a spoon or spatula.
  • Pour the strawberry jam on top and level it up.
  • From the dough left aside, create little crumbles on top of the strawberry jam here and there until you are left out of dough.
  • Bake for 40 minutes at 190C.
  • Leave to cool completely before cutting into bars and serving.

Notes

You can use already made jam for this recipe as long as it not a very liquidy-fluid type of jam.
