Rainy on weekdays, rainy on weekends, rainy all the time.. here goes my picnic.. But I guess we can work that around, right? Chicken breast skewers just like those I will prepare soon outside 🙂
Chicken breast skewers
Servings: 2

Ingredients
- 1 chicken breast skinless and boneless
- 1 tsp garlic powder
- 1 tsp sweet paprika powder
- salt and pepper to taste
- 100 g low fat greek yogurt 2% fat
- 1 small cucumber finely grated
- 1 tsp fresh dill copped
- 1 garlic clove minced
- zest from half a lemon
Instructions
- Remove any trace of fat or connective tissue from the chicken breast, then cut it into medium dices.
- Season the chicken meat with garlic powder, the paprika, salt and pepper. Leave to rest for 10 minutes.
- If you are using wood skewers, soak them in water before adding the meat.
- Add the chicken meat to the skewers. I got 10 skewers (5 skewers per serving).
- Lay the chicken skewers on a preheated grill pan and cook for 2 minutes on each side.
- Prepare a sauce from the greek yogurt, lemon zest, minced garlic, grated cucumber, the chopped dill and salt to taste.
- Serve while hot (my advice , with a nice green salad).
