“No oil cooking” was the slogan of my last months and one of my biggest surprises was the discovery that I can make a perfect omelette without oil! How? Check for yourself!

Ingredients
- 2 eggs whole
- 150 cottage cheese 2.2% fat
- 1 tbsp fresh dill
- 1 tbsp spring onion
- 1 pinch salt
Instructions
- Finely chop the dill and the spring onion and mix it with the cottage cheese. Season with salt.
- Put the eggs in a bowl and whisk them together.
- Preheat a shallow frying pan (I used a crepe pan), pour the eggs mix, then put a lid on. Leave until there is no running egg composition on the top of it, then turn on the other side and leave for 1 minute.
- Serve with fresh vegetables salad.
Notes
Putting the lid on the pan results in a fluffy omelette.
