Cottage cheese omelette

“No oil cooking” was the slogan of my last months and one of my biggest surprises was the discovery that I can make a perfect omelette without oil! How? Check for yourself!

Ingredients

  • 2 eggs whole
  • 150 cottage cheese 2.2% fat
  • 1 tbsp fresh dill
  • 1 tbsp spring onion
  • 1 pinch salt

Instructions

  • Finely chop the dill and the spring onion and mix it with the cottage cheese. Season with salt.
  • Put the eggs in a bowl and whisk them together. 
  • Preheat a shallow frying pan (I used a crepe pan), pour the eggs mix, then put a lid on. Leave until there is no running egg composition on the top of it, then turn on the other side and leave for 1 minute.
  • Serve with fresh vegetables salad.

Notes

Putting the lid on the pan results in a fluffy omelette.
