Pancakes with greek yogurt and fruits topping

Do you know someone who doesn’t like pancakes? I don’t! I know, Nutella or maple syrup dripping ones it’s what you’re thinking. But what if for one day you try out this combination instead? Say bye-bye to sugar!

Ingredients

Pancakes

  • 100 gr whole-wheat flour
  • 100 gr self-raising flour
  • 1 tsp baking powder
  • 4 eggs
  • 300 ml milk 1.5% fat
  • 1 tsp vanilla essence
  • 1 lemon zest
  • 1 tsp cinnamon
  • 2 tsp honey

Topping (for one serving)

  • 100 gr greek yogurt 2% fat
  • 60 gr strawberries
  • 60 gr kaki
  • 50 gr banana
  • 40 gr blueberries

Instructions

Pancakes

  • Mix all the dry ingredients together.
  • Add the milk, the egg yolks, the vanilla essence, the honey and the lemon zest to the dry mix you obtained in the previous step.
  • Whisk the egg-whites in a bowl until the composition is self sustaining.
  • Gently incorporate the egg whites in the dry ingredients mix.
  • Preheat a crepe pan and gently put the pancake composition. The pancake should have about 10 cm diameter.
  • Cook on one side until air bubbles are formed at the surface and the pancake can be easily turn on the other side.
  • Turn on the other side and cook until it can be easily taken out of the pan.

Serving

  • Place 2 pancakes on a plate, put the yogurt and the fruits on top of them. 
  • Drizzle honey on top and enjoy!

Notes

The current cooking time is relevant if you make the pancakes one by one. If you have a larger pan, then you can make 2 at a time.
