Piri-Piri oven chicken drumsticks

When you want to eat some chicken but you are already bored of everything you tried so far, try spicing it up! Big time! That’s what I did today with 1 kg of chicken drumsticks. Turned out very well, you can store it in the fridge for several days and it’s still gonna taste good. Try it out!

Piri-Piri oven chicken drumsticks

Ingredients

Marinade

  • 2 tbsp olive oil
  • 3 garlic cloves
  • 1/2 tsp black pepper
  • 2 tsp sweet paprika
  • 1/2 tsp chilli flakes
  • juice and zest from a lemon non-treated
  • salt to taste

Chicken

  • 1 kg chicken drumsticks skin on and bone in
  • 1/2 bundle of fresh parsley
  • 2 tbsp sweet paprika

Instructions

Marination

  • Mix all marinade ingredients.
  • Wash the chicken drumsticks and add them to a ziplock bag.
  • Add the marinade to the bag, seal it tightly and leave overnight in the fridge.

Preparation

  • Preheat the oven at 200C.
  • Preheat a grill pan (i used an iron cast one).
  • Take the chicken drumsticks out of the bag and sprinkle paprika on top of them on all sides.
  • Grill for 3 minutes on one side, turn over and grill for 3 more minutes.
  • Transfer the remaining marinade and the grilled chicken to a tray and bake for 35-40 minutes (until the meat is cooked through).
  • Serve the chicken drumsticks with fresh parsley after they cooled out.
