Taking advantage of the vegetables I can currently find at the market. Fresh tomatoes, cucumbers, bell peppers, spring onions, you name it. I couldn’t resist combining them all and throw in some fresh cheese and chicken pastrami.
Royal salad

Ingredients
- 4 small cucumbers
- 1 large tomato
- 2 spring onions
- 1/2 red onion
- 1/2 green bell pepper
- 1/4 red bell pepper
- 1 avocado
- 100 g chicken pastrami
- 100 g white cheese I used 'telemea'
- 6 large black olives
- 1 tbsp seeds mix
- juice from a lemon
- salt to taste
Instructions
- Wash all vegetables, peel the onions and some of the cucumbers and cut them into slices or chunks, as you wish.
- Cut the cheese and chicken pastrami into dices.
- Add everything to a salad bowl, drizzle the lemon juice, salt to taste and mix everything gently.
- Garnish with the seeds mix and enjoy!
