Great as an appetizer and also great for a quick breakfast option. It’s inspired from the tzatziki sauce’s freshness and my love for smoked salmon. Have fun!
Salmon and cottage cheese fresh spread
Servings: 8 spreads

Ingredients
- 175 g low fat cottage cheese 2% fat
- 50 g low fat Greek yogurt 2% fat
- 100 g smoked salmon
- 2 fresh cucumbers ~10 cm long
- 2 small scallions (spring onions)
- 1 tbsp fresh dill
- salt and pepper to taste
Instructions
- Wash the cucumbers and cut in quarters length-wise, then discard the soft core with the seeds. Grate the remaining pulp (skin-on), then set aside in a sieve.
- Cut the smoked salmon in thin shreds.
- Finely chop the scallions and rub them with salt.
- Mix the cottage cheese with the yogurt and the chopped dill.
- Drain the cucumbers then mix all ingredients in bowl.
- Season with salt and pepper to taste.
