Salmon and cottage cheese fresh spread

Great as an appetizer and also great for a quick breakfast option. It’s inspired from the tzatziki sauce’s freshness and my love for smoked salmon. Have fun!

Salmon and cottage cheese fresh spread

Ingredients

  • 175 g low fat cottage cheese 2% fat
  • 50 g low fat Greek yogurt 2% fat
  • 100 g smoked salmon
  • 2 fresh cucumbers ~10 cm long
  • 2 small scallions (spring onions)
  • 1 tbsp fresh dill
  • salt and pepper to taste

Instructions

  • Wash the cucumbers and cut in quarters length-wise, then discard the soft core with the seeds. Grate the remaining pulp (skin-on), then set aside in a sieve.
  • Cut the smoked salmon in thin shreds.
  • Finely chop the scallions and rub them with salt.
  • Mix the cottage cheese with the yogurt and the chopped dill.
  • Drain the cucumbers then mix all ingredients in bowl.
  • Season with salt and pepper to taste.
