Tea biscuits

Winter days go nicely with warm tea, don’t they? Whether you have guests or just want to indulge yourself, this recipe will definitely become one of your favorites ways to enjoy a lovely cup of tea. The recipe itself is very easy to prepare and doesn’t require any special ingredients or skills.

Equipment

  • Cookies press with a star shaped cone

Ingredients

  • 200 g all-purpose flour
  • 75 g low fat butter 40% fat
  • 75 g greek yogurt 10% fat
  • 60 g powdered sugar
  • 2 egg yolks
  • zest from a lemon
  • 1 tsp vanilla paste or vanilla essence or a few drops of vanilla extract
  • 40 g 70% cocoa chocolate for garnishing

Instructions

  • Start the oven to preheat it at 190°C.
  • Cut the butter into small cubes and leave to rest at room temperature.
  • Grate the lemon and mix the resulted zest with a few pinches of sugar. This will release the lemony flavor better.
  • Sift the flour in a bowl.
  • Mix in a small bowl the greek yogurt with the lemon zest and the vanilla paste.
  • Use a mixer to mix together the butter with the sugar, then add the egg yolks.
  • Add the greek yogurt composition and mix together.
  • Gradually add the flour while mixing on low speed.
  • Add the obtained composition to a cookie press and add the star shaped cone at the end.
  • Prepare a baking tray with baking paper and create finger shaped biscuits, about 5-6 cm long. You can wobble the cookie press a little to create more undulated biscuits.
  • Insert the tray to the oven and bake for 15 minutes at 190°C.
  • Take out and leave to cool completely, then microwave the chocolate for 2-3 minutes in a small bowl and using a teaspoon, drizzle melted chocolate in random moves across the biscuits.
  • Enjoy with a cup of tea or as they are 🙂

Notes

From this composition I obtained 60 biscuits. Each biscuit has about 26 kcals and about 1 g of fat.
