Sometimes you just want to skip meat or at least that’s what happens to me (not very often, I admin). But this time, I summoned the whole veggie compartment of my fridge and set up the party!

Ingredients
- 1 red onion
- 2 garlic cloves
- 3 carrots
- 300 gr frozen yellow beans
- 1 green bell pepper
- 1/8 small cabbage
- 150 gr frozen peas
- 70 gr pepper paste
- 3 l water
- 700 ml tomatoes juice
- 1 pinch salt
- 1 pinch pepper
Serving
- 2 lovage leaves
- 1/4 chili pepper
- 1 whole-wheat bread slice (per serving)
Instructions
- Peel the carrots and cut them in long strips.
- Peel the onion and cut it in small dices.
- Peel the garlic and mince it.
- Cut the cabbage and the bell pepper in long thin shreds.
- Put the vegetables in a pot, add the tomato juice, the pepper paste, the water and season with salt and pepper.
- Boil everything together with the lid on until cooked completely.
- Leave to cool for 20 mins before serving.
- Serve with a few chili pepper slices, a sprinkle of the freshly cut lovage leaves and a nice whole-wheat bread slice.
