Remember you have those bananas on the kitchen counter that are too ripe? Don’t throw them away, instead use them to prepare a nice warm banana bread. Try it out!
Walnut banana bread

Ingredients
- 3 ripe bananas
- 2 free-range eggs
- 200 g self-raising flour
- 150 g low fat greek yogurt 2% fat
- 50 g walnuts chopped
- 40 g room temperature butter 40% fat
- 1 tbsp coconut nectar sugar or plain brown sugar
- 1 tsp vanilla extract
- 1 tsp baking soda
Instructions
- Turn on the oven and set it to preheat at 180°C.
- Peel and add the bananas to a large bowl. Mash them with a fork until a creamy composition is obtained.
- Add the eggs, the chopped walnuts, the butter, the sugar and the vanilla extract, then whisk together thoroughly with a balloon whisk.
- Sift the flour and the baking soda in another bowl, then mix together.
- Gradually add the flour mix over the bananas mix, while mixing with a spatula until everything is well combined.
- Prepare a narrow baking tin with baking paper on the bottom and raised on the walls as well.
- Pour the batter in the baking tin, then insert it in the oven for 1hr or until a skewer comes out clean if you insert it in the banana bread.
- Take out of the tin and baking paper and set to cool on a cooling rack at least for 20 minutes before serving.
Notes
The obtained banana bread has a moist texture and a nice nutty flavor. Enjoy!
