Walnut banana bread

Remember you have those bananas on the kitchen counter that are too ripe? Don’t throw them away, instead use them to prepare a nice warm banana bread. Try it out!

Ingredients

  • 3 ripe bananas
  • 2 free-range eggs
  • 200 g self-raising flour
  • 150 g low fat greek yogurt 2% fat
  • 50 g walnuts chopped
  • 40 g room temperature butter 40% fat
  • 1 tbsp coconut nectar sugar or plain brown sugar
  • 1 tsp vanilla extract
  • 1 tsp baking soda

Instructions

  • Turn on the oven and set it to preheat at 180°C.
  • Peel and add the bananas to a large bowl. Mash them with a fork until a creamy composition is obtained.
  • Add the eggs, the chopped walnuts, the butter, the sugar and the vanilla extract, then whisk together thoroughly with a balloon whisk.
  • Sift the flour and the baking soda in another bowl, then mix together.
  • Gradually add the flour mix over the bananas mix, while mixing with a spatula until everything is well combined.
  • Prepare a narrow baking tin with baking paper on the bottom and raised on the walls as well.
  • Pour the batter in the baking tin, then insert it in the oven for 1hr or until a skewer comes out clean if you insert it in the banana bread.
  • Take out of the tin and baking paper and set to cool on a cooling rack at least for 20 minutes before serving.

Notes

The obtained banana bread has a moist texture and a nice nutty flavor. Enjoy!
