Colorful breakfast plate

I’m always trying to add more color to the plates I prepare and this is an example of a colorful breakfast that will boost your day. Check it out!

Ingredients

  • 1 free-range egg
  • 1 slice cured ham low-fat
  • 30 g white cheese I used Delaco's 'telemea de vaca in saramura'
  • 1 slice orange
  • 1 slice grepfruit
  • 2-3 cherry tomatoes
  • 25 g fresh mangetout peas
  • 2 slices yellow bell-pepper
  • 1 slice bread
  • salt to taste

Instructions

  • Add 1l of water to boil in a small pot, when simmering, add the egg and leave to boil for 6 minutes. Take out and immerse for 1 minute in ice-cold water (very cold tap water will do as well).
  • In the meantime, add 1l of water and a tsp of salt and bring to boil, then add the mange-tout peas and boil for 5 minutes.
  • Lightly toast the bread slice.
  • Bring everything together on a serving plate and enjoy!
