Carrot cake porridge

You can never have too much porridge. Porridge yesterday, porridge today, guess what – porridge tomorrow! Not so long time ago I tasted oats porridge for the first time, and since then, I try to find new combinations and to play with what I have at reach in my pantry and my fridge.

Ingredients

  • 50 gr rolled oats
  • 250 ml milk 1.5% fat
  • 1 tsp vanilla essence
  • 1 tsp honey
  • 1 carrot
  • 30 gr blueberries
  • 1 walnut

Instructions

  • Peel and grate the carrot (leave a tsp of grated carrot aside- you will need this for the topping).
  • Put the oats, the grated carrot, the milk, the vanilla essence in a pot, mix and boil everything until creamy.
  • Turn off the heat and add the honey.
  • Pour the content into a serving bowl and add the blueberries, the remaining grated carrot and the walnut chopped in large pieces.
