Colorful breakfast

Ingredients
- 1 free-range egg
- 1 slice cured ham low-fat
- 30 g white cheese I used Delaco's 'telemea de vaca in saramura'
- 1 slice orange
- 1 slice grepfruit
- 2-3 cherry tomatoes
- 25 g fresh mangetout peas
- 2 slices yellow bell-pepper
- 1 slice bread
- salt to taste
Instructions
- Add 1l of water to boil in a small pot, when simmering, add the egg and leave to boil for 6 minutes. Take out and immerse for 1 minute in ice-cold water (very cold tap water will do as well).
- In the meantime, add 1l of water and a tsp of salt and bring to boil, then add the mange-tout peas and boil for 5 minutes.
- Lightly toast the bread slice.
- Bring everything together on a serving plate and enjoy!
