Good fats and high protein breakfast

This is a good combination for mornings when you want a royal-like treat. Velvety texture combines with the salmony flavor just perfectly. It’s full of good fats and a good protein load. Enjoy!

Ingredients

  • 100 g smoked salmon
  • 1 avocado
  • 2 eggs
  • 60 g light fresh mozzarella
  • 4 artichoke cores in brine
  • 1 handful cherry tomatoes
  • 1/2 lemon
  • 2 slices whole-wheat bread
  • salt and paprika to taste

Instructions

  • Add a shallow pan to the stove and when heated, add the eggs, then cover with a lid. Turn the heat to a minimum until the eggs are cooked (runny yolks are my favorite, but you can cook them all the way through).
  • Cut the avocado in halves, then scoop out the pulp.
  • Add one egg to a serving plate and season it with salt and paprika. Add the avocado half and all other ingredients divided in two.
  • Serve with whole-wheat toast.
