Good fats and high proteins breakfast

Ingredients
- 100 g smoked salmon
- 1 avocado
- 2 eggs
- 60 g light fresh mozzarella
- 4 artichoke cores in brine
- 1 handful cherry tomatoes
- 1/2 lemon
- 2 slices whole-wheat bread
- salt and paprika to taste
Instructions
- Add a shallow pan to the stove and when heated, add the eggs, then cover with a lid. Turn the heat to a minimum until the eggs are cooked (runny yolks are my favorite, but you can cook them all the way through).
- Cut the avocado in halves, then scoop out the pulp.
- Add one egg to a serving plate and season it with salt and paprika. Add the avocado half and all other ingredients divided in two.
- Serve with whole-wheat toast.
