Grilled turkey breast with pickled cucumber and veggies

I totally fell in love with steamed veggies – both the clean taste and the reduced preparation time. So this is the best side dish I can prepare when I don’t have much time for cooking. And what could go better than a grilled white meat with a greek yogurt sauce – with a twist to it, of course 🙂

Ingredients

  • 300 g turkey breast skinless
  • 400 g broccoli
  • 1/2 yellow bell pepper
  • 6 radishes
  • 200 g low fat greek yogurt
  • 2 pickled cucumbers
  • 2 tsp fine Dijon mustard
  • salt and pepper to taste

Instructions

  • Steam the broccoli in a steamer for 10 minutes (if you don’t have a steamer, you can simply use a pot for boiling the water and a sieve over it to hold the veggies – but you should also have a good lid that could cover the pot and not let the steam escape completely).
  • Cut the meat in slices and season with salt and pepper.
  • Preheat a grill pan and cook the turkey breast for 3 minutes on each side.
  • Finely chop the cucumber and drain the excess water from it. 
  • Prepare a sauce from the yogurt, the mustard, the pickled cucumber, salt and pepper.
  • Season with salt and pepper and serve with a fresh garnish of bell pepper and radishes.
