Mixed beans salad

Looking for a good vegetable source of proteins? This salad is the answer – good combination of crunchy and soft textures, fresh and fragrant aromas, exactly what I look for in my kind of salads.

Ingredients

  • 240 g canned mix beans kidney beans, white beans, chickpeas
  • 100 g mung beans
  • 100 g goat cheese
  • 6 radishes
  • 3 cherry tomatoes
  • 1 carrot
  • 1/2 spring onion
  • 2 garlic cloves
  • 1/4 fresh parsley bundle
  • juice from half a lemon

Instructions

  • Wash and drain the canned beans. Do the same with the mung beans.
  • Wash and cut in quarters the cherry tomatoes and radishes.
  • Finely cut the spring onion and the garlic cloves.
  • Cut the goat cheese in small chunks.
  • Mix everything in a salad bowl.
  • Peel and grate the carrot and mix again.
  • Season with the lemon juice, salt and pepper to taste.
  • Garnish with freshly cut parsley.
