Ingredients
- 240 g canned mix beans kidney beans, white beans, chickpeas
- 100 g mung beans
- 100 g goat cheese
- 6 radishes
- 3 cherry tomatoes
- 1 carrot
- 1/2 spring onion
- 2 garlic cloves
- 1/4 fresh parsley bundle
- juice from half a lemon
Instructions
- Wash and drain the canned beans. Do the same with the mung beans.
- Wash and cut in quarters the cherry tomatoes and radishes.
- Finely cut the spring onion and the garlic cloves.
- Cut the goat cheese in small chunks.
- Mix everything in a salad bowl.
- Peel and grate the carrot and mix again.
- Season with the lemon juice, salt and pepper to taste.
- Garnish with freshly cut parsley.
