Oriental salad with a twist

You know by now that this is not the traditional potato oriental salad. It’s something different, it’s something colorful and joyful that you must try and fall in love with.

Ingredients

  • 4 white potatoes
  • 4 small purple potatoes
  • 4 red cherry tomatoes
  • 4 yellow cherry tomatoes
  • 4 black cherry tomatoes
  • 5 radishes
  • 1/8 green bell pepper
  • 1 tbsp radishes sprouts
  • 1 small red onion
  • 12 black olives
  • 2 fresh dill leaves
  • 1/2 lemon
  • 1/2 tsp salt
  • 1/2 tsp ground black pepper

Instructions

  • Boil the potatoes (skin-on) in salted water. Drain, peel and cut in round slices.
  • Cut the other vegetables at will, in any shape you want. Finely chop the dill.
  • Prepare a large salad bowl and put all the vegetables, the olives, the radishes sprouts and the dill.
  • Season with salt, fresh ground pepper, the juice from half a lemon and mix everything together.
